Varieties

There are many varieties of basil.They can be distinguished by morphological differences and by the quality and quantity of essential oils contained. The best known varieties are:

Food and aromatic composed

Basil leaves contain tannins, saponins and glucose.

Its essential oil is composed of eugenol, estragole, basil, camphor, linalool, ocimene, cineol, sesquiterpenes and other substances

Culinary use

Basil and parsley are the most widely used herbs in cooking. Basil leaves are used for the preparation of the classic tomato and basil pasta and to flavor sauces, cold dishes and salads . It is the basic ingredient for the preparation of the world-famous” pesto”.

Medical uses

Basil is an excellent natural remedy with its stimulant, tonic, and digestive properties.It relieves migraines, nervous insomnia, neurosis and other disorders of the nervous system. It is helpful for th food allergies and stomach cramps.

Varieties

Marjoram belongs to the same Family of oregano, with very similar features. It is native to North Africa, where most of the world production comes from. It is one of the semi-spontaneous herbs and is traditionally spread in uncultivated areas and on street- edges in all Mediterranean countries. It is mainly grown in Egypt, but also in Greece, Hungary, United States and other countries.

Food Composition

Marjoram contains tannins, pentosans, active ingredients. Essential oils, synthesized by the plant during flowering, are rich in alpha-and beta-pinene, ocimene, limonene and other active components.

Culinary uses

Marjoram is used in several recipes: stews, meatballs, stuffings, fish, vegetables, sauces, salads and in aromatic oils and vinegars (like chilli). As well as juniper berries, used to soothe cough, marjoram can be found in herbal teas and in spirits, such as liquor and vermouth.

Medical uses

Marjoram has diuretic, digestive and stimulant properties.It has healing effects in cases of hysteria, epilepsy and intestinal colic.
Inhaling marjoram steam can help in case of colds, coughs.
Marjoram is also used as mouthwash for a gentle disinfectant action.

Parsley

Parsley belongs to the Umbelliferae family and is traditionally grown in Central and South Europe, England, in Africa, East Asia and India.

It can reach 80 cm height, and its flowers are white or greenish.

It is used as an aromatic herb and for its healing properties.

Variety

Common parsley (or garden parsley) with small tripinnate leaves, curly parsley (grown and used especially in America and England), dwarf curly parsley, parsley “Giant of Naples” fern-leaf parsley, parsley “giant Eboli” parsley root (also known as Hamburg parsley root and grown for its fleshy turnip-shape, edible).

 

Food Composition

The leaves of parsley are rich in vitamin C, beta-carotene, iron and folic acid.

The fruits of parsley (commonly called seeds) contain 2 to 7% of essential oil composed apiolo, and terpenti miristina. Its essential oil is used to flavor wines, cheeses and other dairy products

Its roots contain 88% water, 3% carbohydrate, 3.1% protein, l ‘1.5% of mineral salts and a little essential oil.

 

Medical Uses

Parsley is an officinal herb, it is used to stimulate appetite,is a digestive aid and is an excellent natural nutrient. It is a mild diuretic and has a spasmolytic effect. 
Its essential oil is an excellent natural remedy against the harmful effects of some carcinogens such as benzopyrenes contained in cigarette smoke, or charcoal grilled food.

Its high content of vitamin C helps prevent osteoarthritis and polyarthritis.

 

Culinary uses

Parsley is one of the most widely used herbs in cooking along with basil leaves and salvia officinalis (sage), for both decorating and to flavoring dishes. The use of parsley “hedgehog”is very common in Anglo-Saxon countries, mainly as ornamental garnish.

Varieties

Sweet mint (Mentha viridis) should not be confused with Peppermint .For its strong and characteristic aroma peppermint is used for special preparation and extraction of essential oil. Mint has a more delicate aroma.

Variety

Rosemary is an evergreen shrub. Its leaves are narrow, similar to pine needles and up to 3 cm long. Its flowers are small, ranging in color from white to blue-violet. The Rosmarinus officinalis is the only representative of the genus Rosmarinus. Every different varieties is characterized by different contents of essential oils.

Food and aromatic composition

Rosemary is rich in essential oils extracted from the leaves and flowering tops, which are composed mainly of alpha-pinene, bornilacetato, cineol, borneol, cariofilene. This drug also contains terpenes, phenolic acids, tannins, rosmarinic acid, camphor, resins and many others.

Jew’s Mallow plant is famous among the countries bordering the Mediterranean Basin , and Central and Southeast Asia , and many countries in South America , such as Brazil and Mexico , ie they are geographically dispersed along the equatorial regions and displayed. Grown dramatically in Egypt and we own a large part of which is sufficient to the needs of overseas markets.

Food Composition:

Ginger or ginger, perennial plant, and there are several varieties of it, as it resembles risomat turmeric, is perfect in terms of plant use and medical use is growing in Asia generally since the era of history, and there are frequent in Egypt, India and many countries in East Asia, China, and Mexico, and many other tropical countries.
